I know there is several Jewelcrafters in the guild now, but I've found a site that will be very helpful to everyone.

When you ask a JC if they have a gem with Stamina and Intellect (for example), they then have to check through all their designs to see which one it is.

To save a bit of time, check out Gem Finder. At a couple of clicks, you can narrow down your search, then tell the JC exactly what gem(s) you need.

I've been using it for a few days now, as it is a big time saver when someone does ask for gems with 2 stats on them.

Edit. I've noticed on that site there is WotLK epic gems listed as well, but I don't know when they are going to be added to the game.
